Honey Lemonade

    Although lemonade seems more like a summer beverage, I like making it beginning in December when my Meyer lemons ripen. 

    Stir 1/2 cup of honey into 1 cup of freshly squeezed lemon juice then add 5 cups of water.  For easier storage,  wait until you serve to add the water. It's also good with sparkling water.

    Nothing like fresh squeezed lemonade...even in December!  I usually make a Rosemary simple-syrup for our lemonade, so interested to use honey next time.  Our Meyer lemons are starting to ripen.

    Jen, I find that it's challenging to get the honey to dissolve into the liquid if it's not at least warm. I usually end up putting it into the smallest bit of hot water that I can (depending on the amount of honey) and then refrigerating it. What do you do?
